The safest and most fool proof way to submit your fonts for printing is to convert that live text to outlines. It is the best way to guard against any subtle (or not so subtle) changes to your fonts, tracking, weights or alignment.
Having said this, if you feel there is a possibility that you would either now or in the future, like us to edit, alter or create alternate versions of your document, then leaving the live fonts in place can be handy.
